Situated just 10km north of the Kaikoura township you will find Kaikoura’s gin distillery, nestled within a working sheep and beef farm.
Meet Justine the distiller who can show you the process of gin making, introduce you to ‘Bruce’ the 40 litre copper Alembic Still that works the magic and her bespoke production line.
Justine will explain her two story inspired gins to you whilst you sample them, neat and then with a hint of tonic which will open up the flavours.
Hear why the little Hutton Shearwater bird, endemic to the Kaikoura coastal area inspired the contemporary Shearwater Gin and how the family and farm helped inspire her to create her botanical London dry Woolshed Gin.
